Brazil & Pão de Queijo
In Brazil, Pão de Queijo is not a snack — it is a daily ritual, warm from the oven, passed between hands at the family table. It has been part of the Brazilian morning, the afternoon pause, the shared moment, for as long as anyone can remember.
Rooted in something ancient
Everything begins with the cassava root — a sacred crop woven into the origin stories of Brazil's indigenous peoples, and the sole source of the starch that gives Pão de Queijo its unmistakable texture. No wheat. No substitutes. Just the root, as it has always been.
A recipe that was never written down
Ours was passed the way the best recipes always are — through memory, repetition, and the particular warmth of a family kitchen. We carry it with us into every batch we make, refined and unhurried.
Where Brazil meets the Netherlands
We make our Pão de Queijo in the Netherlands, and we make it with Dutch cheese — aged, full-flavoured, and exceptional. The result is a meeting of two food cultures, each making the other better.
Small batches, every piece by hand
We work in small batches because quality and scale have never been comfortable neighbours. What leaves our atelier is exactly what we would serve at our own table.
Nothing hidden. Nothing added.
We choose our ingredients the way you would for someone you love — carefully, with full knowledge of what each one does. No preservatives, no stabilisers, no additives of any kind. Clean by conviction, not by trend.
